Can I use Ubiquiti UniFi Ap AC Pro as an access point to extend an existing Mac Airport Extreme network? If so, how?

No. It is not possible to "repeat" the WiFi signal of the Airport Extreme with an AP AC-PRO. What is possible, however, is to simply configure the AP AC-PRO with the same SSID and connect it to the network via Ethernet.
