Has anyone solved VoLTE with a sim card mobile number? In other words, I connect an analogue phone to the RJ11 and make a call via a mobile phone number?

Yes, it works fine for me. I simply used a prepaid SIM, but it also works with a normal mobile phone subscription.

I haven't tried different providers because not all of them support VoLTE. However, Swisscom has announced that normal GSM telephony will no longer work (the reverse).

The old infrastructure, via the mobile phone number, would then no longer work. I have been making calls via GSM with a mobile phone number for years and thus have a cheap flat rate, including a backup connection if VoIP were to fail.

VoIP instead of VoLTE would work with almost any router. However, the router mentioned is ideal for VoLTE.

If the RJ11 connection is connected to an old Fritzbox as a VoIP server, the mobile phone number can be used worldwide. I recommend the app Groundwire for mobile phones.
