Does anyone know if it is somehow possible to operate the Fritzbox 6850 5G with an "Up Mobile M" SIM from Sunrise? And if not, why not?

I don't have the same subscription, but another one (Sunrise wifi or something like that) and it works!

I use the LTE model with a SIM card from Sunrise (We Connect Surf, monthly price: CHF 20, according to the GTC not "recommended" for use with a router) and after about 3-4 weeks with a daily data consumption of 5-10GB, I was throttled in such a way that HD-TV could no longer be transmitted smoothly.
