Can access to the stick be protected with a password, as is possible, for example, with the "Sandisk Ultra Flair (16GB, USB 3.0)" stick?

This stick does not come with any software for this purpose. However, this can be done with Windows, Linux or MAC board tools.
However, the SanDisk Memory Zone app for Android is included. With this, the memory of an Android can be managed and backed up and then simply copied to a PC.

You can encrypt your USB stick using Bitlocker. You can do this on any Windows computer.

works at least on windows devices with Bitlocker 2Go with actually every usb stick. and who wants apple?
