Yes, that should work. I don't know the difference to the Windows EDU version in detail but during my studies we got access to MSDNAA and there are also Windows 10 Pro versions. As far as I know, it is now also possible to upgrade between the versions by simply replacing the product key.

I firmly believe that the predefined process was not followed (https://support.microsoft.com/en-us/windows/upgrade-windows-10-home-to-windows-10-pro-ef34d520-e73f-3198-c525-d1a218cc2818). The initial key may not have been a "real key" but a fake key. Another option is to do a complete reinstallation with W10 Home and then upgrade, or much easier to use a full OEM version that is not much more expensive.

Basically no problem. You may have to activate on your new PC by telephone (i.e. call the activation centre, enter the code (received when slui.exe is executed) and then enter the code received on the PC).
