I would like to connect my XLR microphone (Rode NT1) to the PS5. I have the Universal Audio Arrow interface. After a lot of research, I found out that this Elgato Wave XLR can be used to connect my XLR microphone to the PS5. My question: What is the difference between this audio interface and other audio interfaces (e.g. Focusrite, Universal Audio, Steinberg) that apparently only THIS audio interface works for my use case.

Can I use a wireless headset with a USB dongle and still use the volume mix of the different channels in the software or is that only possible in a roundabout way like with the GOXLR?

Hello, I myself have been using the WaveXLR with a Steelseries Arctis 7 for almost 2 years without any problems and with full functionality. You can easily set the output of the monitor signal in the software and thus adjust the volume of the only inputs on the monitor and stream mix individually.

nothing is processed in this sense as long as you do not set an EQ yourself or switch on the clipguard. as far as I know, the clipguard has no effect on the actual sound. If you don't need any other features, I don't know why you shouldn't use it.
