How do I charge an AGM battery correctly so that the battery management is correct afterwards? Clamp directly onto the battery? With an adapter via a 12-volt socket?

With AGM, the negative terminal (depending on the vehicle, it can also be the positive terminal) should be connected to the chassis and not directly to the battery. It is best to check the vehicle manual.
