Does the Fenix 3 also have a "flight mode"? So can Bluetooth and WLAN be deactivated easily and quickly?

No.
To turn off Bluetooth, exactly 9 buttons must be pressed (takes about 10 seconds).
Wifi and GPS are only activated when a corresponding app is started. That's why you don't really have to turn them off.
I have never turned off Bluetooth either. It doesn't really eat up the battery, and I don't think anyone is interested in it on a plane.
