You can already disable the LTE, then you just need the iPhone nearby to use all the functions that need internet. If you don't have the iPhone with you, you simply won't receive any calls, text messages or be able to do anything that requires internet. :-)
It's always been a one-year warranty for open products. Might as well get the new stuff
If you look in the specifications under "Material Glass", you will see that this is a sapphire glass.
