On the product picture, the temperature scale only goes up to 85°C, can the water be heated up to 100°C? Can 90°C, for example, also be set as the desired temperature?

You can heat the water up to 100°! Just wait until the display shows 100° and then take the jug away.... The 85° is only meant for the "keep warm" option.
The cooker switches off at 100° depending on the altitude, 90° is not adjustable and must be switched off when reached.
