Put the whole block in the freezer (-20°C) for at least 18 hours before making the ice cream or sorbet. Then you can make your recipe; if you don't use the ice cream right away, pour it into another container; don't leave it in the cooler. At least that's what I read in the instructions and I can confirm it because I've already tried the product. Without it, it doesn't work.
