Which extension cable can I use to extend the distance from the socket to the start of the Lightstrip? I would like to install the Omniglow Lighstrip on the ceiling, but the socket is on the floor. The cable supplied is welded to the power supply unit and is only 1.5 metres long. I would need at least 2.5m here

You can use any cable. It is a normal two-pole plug.
