Why is the version with red switches more expensive? As far as I have seen, all three versions are the same price at the manufacturer...

Digitec also calculates according to supply-demand etc.
ddDigitewch also sells the austaasch/eratz switches from the manufacturer itself, see if it is more economical that way ;-)
