I still don't understand the external monitor setup and how to connect them. I have 3 monitors that I would like to operate. One 4K 120 Hz monitor and 2x Full HD 60 Hz monitors. Would that be possible? How do I connect them? (cables etc.)

The Mac Mini has 1x HDMI port and 3x Thunderbolt/USB-C ports. You can connect your monitors to these ports. The HDMI port can be connected as normal via an HDMI cable and the Thunderbolt/USB-C ports require a cable that has USB-C to HDMI or USB-C to DisplayPort connectors, for example.
