Do they also fit the newer Sony WF-1000XM5 (ANC, 8 h, wireless)? And is S the smallest you can order as a replacement?

no, the suitable ear tips for WF-1000XM4 are EP-NI1000S/EP-NI1000M/EP-NI1000L and the smallest one is SS.
However, the compatible ear tips for WF-1000XM5 are EP-NI1010 and the smallest is S.

You can use them, but they don't have a protective grille...so your headphones will get dirty more quickly...the previous model broke in the same way...
No idea if they fit on the xm5, but I can well imagine that it fits. Yes "s" is the smallest size
