Sure, you can! I've been using these headphones for years for music productions, very balanced. For instrument tracking the headphones are great. For mixing/music I would recommend the DT 990 or 1990, depending on your budget. The Scarlett has a headphones out with its own gain control, you can connect your phones there and the amp should have enough power for the 250 ohms.
